
It feels like lockdown is on Day 7532….I’ve lost count! Sleep, work from home, look forward to weekend cocktails, repeat!
The first few days of Spring spoilt us in Melbourne with 22°C + and all I wanted to do was get to the beach. I’m close enough to there and go for a nice long walk thankfully but there’s really not much else to do in Melbourne at the moment…other than make cocktails.
My personal cocktail making tips
- Egg Whites- I have been purchasing a carton of egg whites from my local Coles/Woolworths to avoid wastage.
- Foamy cocktails- Shake up egg white in a shaker without ice- best tip ever to keep the cocktail foamy right to the bottom of the glass.
- Homemade Sugar Syrup- In a saucepan over heat, dissolve 1 cup of fine/caster sugar with 1 cup of water and simmer for approximately 10minutes to allow the mixture to thicken. Cool before using. This mixture can last up to a week if stored in a container/glass bottle.
So….I thought I’d share a few favourites!
White Lady

Ingredients (Makes 1)
- Half an egg white
- 45ml Gin
- 15ml Triple Sec
- 15ml sugar syrup
- 30ml fresh lemon juice
- Lemon twist, to garnish
- Ice
Method:
- In a shaker with ice, add egg white and shake up without ice for 30seconds.
- Add gin, triple sec, lemon juice, sugar syrup and ice.
- Shake to combine, and strain into a glass.
- Garnish with a lemon twist.
Raspberry, Mint & Prosecco

Ingredients (Makes 1)
- 60ml Vodka
- 2tablespoons sugar syrup
- 1tablespoons pureed raspberries
- Chilli flakes
- ½ cup Prosecco (approx)
- 3-4 Fresh mint leaves
- Shake vodka, sugar syrup, pureed raspberries, chilli flakes and a handful of fresh mint in a cocktail shaker over ice.
- Strain into a short glass over ice.
- Top with prosecco and stir.
- Garnish with a sprig of fresh mint
Vodka Sours

Ingredients (Makes 1)
- 1 egg white
- 60ml vodka
- 30ml lemon juice
- 15ml tablespoon lime juice
- 15ml tablespoon sugar syrup
- 2 dashes Angostura bitters
- Ice
- Slice of lemon, a few drops of bitters to garnish
Method
- Shake up egg white in a shaker without ice.
- Add all other ingredients, plus ice.
- Strain into a short glass.
- Garnish with a slice of lemon and a few drops of bitters.
Who Shot Tom Collins?

Ingredients
- Lemonade (Serves 2)
- 2cups cold water
- ⅔cups lemon juice (8 to 10 lemons)
- ⅓cup sugar
- 30ml Dry gin
- 15ml Shiraz gin (We used Four Pillars Shiraz Gin)
- 100ml old-fashioned lemonade
- Lemon wedge, to garnish
Method
- To make home-made lemonade, mix water, lemon juice and sugar in jug until sugar is dissolved.
- Add gin and lemonade to a highball glass, mix with a stirring spoon.
- Top with ice.
- Measure shiraz gin and gently pour into the glass so that it floats on top.
- Garnish with a lemon wedge.
