This Christmas we all pulled together to celebrate Christmas Day. I volunteered to make dessert and this year, I decided to make a Mint Chocolate Cheesecake.
Last year, I cooked the entire dinner for six people and this year it was great to have others involved.
Here is how you can make yours:
Ingredients:
300g Oreo Cookies
80g Butter
750g Cream Cheese
75g caster sugar
2tspn gelatine
1/2 cup of hot water
2tspn of mint essence
100g white chocolate (melted and slightly cooled)
100g dark chocolate (melted and slightly cooled)
600ml of thick whipping cream
- Blitz the Oreo Cookies in a food processor
- Melt the butter and mix with the blitzed Oreo Cookies
- Press into a baking tin and place in the fridge to set
- Using a electric whisk, cream the caster sugar and cream cheese until well combined
- Mix the gelatine with hot water until dissolved and mix into the cream cheese
- Divide the mixture into two separate bowls, 2/3 (Bowl 1) & 1/3 (Bowl 2)
- In bowl 1, add 400ml whipping cream and fold in. Stir in the mint essence and cooled white chocolate
- In bowl 2, add 200ml of whipping cream and fold in. Add the dark chocolate
- Remove the chilled base from the fridge and add the contents of the bowl 1 to the chilled base
- Add the contents of bowl 2 on top
- Using a skewer, marble the top layer through the second layer of the cheesecake
- Grate dark chocolate over the top of the cheesecake and chill in the fridge for 2-3hours
